There are many things I missed when I moved from North Carolina back into Illinois. Proximity to the beach, being close to the mountains, and eating amazing Carolina BBQ!
When I first had some of this BBQ, I absolutely hated it. But I don’t think I was prepared. Funny enough, about a few days later I was craving the BBQ again. Ever since, I’ve been hooked and would rather have this vs the sickeningly sweet tomato based BBQ.
So, if you are a virgin vinegar BBQ eater, be prepared for the tartness. Also, you MUST have cole slaw in the same bite. The creaminess of the cole slaw complements the bite of the BBQ and makes a wonderful meal.
This is also one of my favorite meals since it is so easy, and uses my crockpot! I can prep the meat the night before, plug the crockpot in when I’m getting my coffee in the morning, and we come home from work to some amazing BBQ!
Keto Carolina BBQ (Vinegar)
Keto Friendly Vinegar BBQ
0 carbs!!!
Ingredients
- 3-4 pound pork butt
- 1/2 + 1/4 cup apple cider vinegar
- 2 tbsp Olive Oil
- 1 tbsp splenda
- 1-2 tbsp crushed red pepper flakes
- Salt & Pepper
Instructions

Cut up pork butt into 2-3" square pieces and generously apply salt and pepper

Add 1/2 cup (keep 1/4 cup for later) vinegar and 2 TB to the bottom of the crock pot. Put the cut pieces into the crockpot and Sprinkle red pepper flakes over the pork butt

Set crock pot on high and cook for 6-8 hours (we had ours in longer and its ok).

Remove pork, shred with two forks. Discard all but 1/2c juice. Put pork and 1/2 cup reserved juice back into the crock pot and add 1/4-1/2 cup of apple cider vinegar. Mix and serve!
