I started looking for recipes for boneless pork chops, and found some interesting ones, but they were all using canned cream of mushroom soup. I’m not a fan of that in the first place, but it certainly wouldn’t have any room on a Keto diet these days.
So what to do? Make stuff up, right?!
One of the things I prefer to do is not make a huge mess in the kitchen. So one pan recipes are always something I like (and if you can put it into a crockpot or an Insta Pot, I’m in love!).
Well, this was one I really did like – it tasted and smelled sinfully good! The combination of the salty pork and the mushroom sauce was very filling.
I bought Aldi’s brand boneless pork chops. I had two packages (to have leftovers). I simply added salt and pepper, and cooked these in coconut oil in the pan.
Next, it was a matter of making the sauce.
I think next time, I may consider doing this in the crockpot. It only took about 15 minutes before everything was ready, but think the meat could have been cooked a little more to make it slightly less chewy.
The mushroom sauce had a great flavor, and it worked well over cauliflower rice. One note – this is not a thick sauce – the only real thickening agent you’re using is the cream cheese, which helps a little but won’t be like a flour-based thickener.
One Pan Keto Pork Chops with Creamy Mushroom Sauce
Great Keto/Low Carb meal to make all using one pan! And only 3 carbs per serving!
Ingredients
- 2 lbs Boneless Pork Chop
- 1/4 cup onions, chopped
- 1/4 cup mushrooms, chopped
- 1 clove garlic
- 1/4-1/2 cup Heavy whipping cream calorie count assumes 1/2 cup
- 4 oz cream cheese
- 1 oz white wine
- 1 tbsp butter
- 1 tbsp chicken base (in 1/2 cup water)
- 1 tbsp coconut oil
Instructions

Place coconut oil in pan and cook pork chops, approximately 6 minutes each side until pink is gone

Remove pork chops, and add butter to pan. Once melted, add onions and mushrooms until well browned. Add garlic

Dissolve chicken base in 1/2c of water (if you like thicker sauces, you can use a smaller amount of chicken base and 1/4c water) and add to the pan, scraping the bottom of the pan as you mix everything together.

Add cream cheese and slowly break up and mix into the sauce. Once incorporated, add the heavy cream. Mix until well blended.

Add pork chops back into pan and simmer for 10 minutes. Serve with vegetable or other side (like cauliflower rice and butter).
