Keto Friendly Vinegar BBQ

Ingredients

  • 3-4 pound pork butt
  • 1/2 + 1/4 cup apple cider vinegar
  • 2 tbsp Olive Oil
  • 1 tbsp splenda
  • 1-2 tbsp crushed red pepper flakes
  • Salt & Pepper

Instructions

  1. Cut up pork butt into 2-3" square pieces and generously apply salt and pepper

  2. Add 1/2 cup (keep 1/4 cup for later) vinegar and 2 TB to the bottom of the crock pot.  Put the cut pieces into the crockpot and Sprinkle red pepper flakes over the pork butt

  3. Set crock pot on high and cook for 6-8 hours (we had ours in longer and its ok). 

  4. Remove pork, shred with two forks.  Discard all but 1/2c juice.  Put pork and 1/2 cup reserved juice back into the crock pot and add 1/4-1/2 cup of apple cider vinegar.  Mix and serve!
